Pizza chips take 15 minutes to make and are made with tortillas and other pizza ingredients, including mozzarella cheese and smaller slices of pepperoni. I make pizza chips when a warm snack needs to happen fast. Other ingredients on pizza chips, including smaller slices of pepperoni, crisp up. I serve marinara sauce on the side.

I bake two parchment-lined baking sheets in the oven at a time and spread out tortilla wedges to avoid steaming underneath the cheese. Cut assembled tortillas into eight wedges to place on the baking sheets. The cheese can bubble, but the wedges won't stick to each other on the baking sheets.
Low-moisture, partially skimmed mozzarella cheese is my preferred cheese for this recipe. It melts well without softening the tortillas and helps the edges of the filled tortillas crisp up. I brush both sides with oil, even when I’m in a hurry, and take the baking sheets out of the oven when the cheese is melted and the edges are browned. I occasionally use pregrated cheese, but only low-moisture pregrated cheese.
I eat chips with marinara sauce. Other dipping sauces include ranch and pesto. Other dip choices are garlic and hot beer cheese. Spicy soppressata chips have red pepper flakes. Another option is Canadian bacon and pineapple chips. Napkins should be available because the cheese on chips will stretch when the wedges are hot.
What makes this special
- Made in 15 minutes, with 5 minutes of prep time, and no dough kneading required.
- Two baking sheets will fit all the wedges. The wedges do not need to be stacked.
- Four tortillas make 32 wedges that can be served on a platter at the table for sharing.
- Air fryer: When the oven is busy. Air fry multiple batches in the basket.
- Replace soppressata or vegetable toppings with Canadian bacon and pineapple. Make the tortillas the same way.
